Everybody in culinary arts will be required to do a project their senior year it is manditory.  If you don't do this project you're in trouble. Hate to break it to you but you will have to write 60 pages about your culinary buisness. This project is really important so you should start early so will be able to do the project without cramming all 60 pages in less than a week. Starting freshman year might make it easier later on. The easier the better.
